As you all already know that I am crazy about soups, today I want to share with you Leek and Potato Soup recipe.
I start by peeling and roughly slice the carrots and 1 medium onion. Then I cut the ends off the leeks, quarter them lengthways, wash them under running water and cut them into 1cm slices. I also prepare at this stage the potatoes by peeling and cut them in cubes.
In the meantime I place a large pan on a high heat and add 2 tablespoons of olive oil. After that I add all the chopped and sliced ingredients and mix together with a wooden spoon and season them with salt. I cook them for around 10 minutes until the carrots have softened, but are still holding their shape, and the onion, leeks and potatoes are lightly golden.
Next step is to add boiled water over the vegetables and add to the boiling point and leave it for another 15-20 minutes until everything is boiled and soft.
When vegetables are ready, I blend them with a hand blender until smooth and then add the butter, milk and season with extra salt and pepper.
I like to serve it with goat cheese, parsley, paprika and homemade croutons.

Your version is different than other potato leek soups. Carrots are the one vegetable that I really don’t like so my Potato Leek soup is carrot free. Your soup does look delicious though.
