Leek and Potato Soup

As you all already know that I am crazy about soups, today I want to share with you Leek and Potato Soup recipe.

• 4 carrots • 1 medium onion • 400g leeks • 400g potatoes • Olive oil • milk • butter • sea salt • parsley • freshly ground black pepper • paprika and goat cheese f

I start by peeling and roughly slice the carrots and 1 medium onion. Then I cut the ends off the leeks, quarter them lengthways, wash them under running water and cut them into 1cm slices.  I also prepare at this stage the potatoes by peeling and cut them in cubes.

In the meantime I place a large pan on a high heat and add 2 tablespoons of olive oil. After that I add all the chopped and sliced ingredients and mix together with a wooden spoon and season them with salt. I cook them for around 10 minutes until the carrots have softened, but are still holding their shape, and the onion, leeks and potatoes are lightly golden.

FullSizeRender_1Next step is to add  boiled water over the vegetables and add to the boiling point and leave it for another 15-20 minutes until everything is boiled and soft.

When vegetables are ready, I blend them with a hand blender until smooth and then add the butter, milk and season with extra salt and pepper.

I like to serve it with goat cheese, parsley, paprika and homemade croutons.

  1. Your version is different than other potato leek soups. Carrots are the one vegetable that I really don’t like so my Potato Leek soup is carrot free. Your soup does look delicious though.
