Romanian Potato Salad (Salata de Boeuf)

Romanian Potato Salad (Salata de Boeuf) is a typical Romanian dish that can be found in many Romanian homes on Christmas. It is often made for special occasions and around the holidays. A traditional potato salad that is a bit tangy, but quite delicious.

It can be quite time consuming, as you have to do a lot of dicing but is worth it.

If I don’t make this, it just wouldn’t feel like Christmas. When I make this salad I don’t use a recipe with exact quantity for each ingredient, so it doesn’t really matter if you’re exact because the most important thing is for you to like and enjoy it.

Ingredients

500g of beef meat

5 medium potatoes

5 eggs

3-4 large carrots

2 parsnips

1 celery

gherkins

pickled tomatoes

pickled red peppers

black olives

mayonnaise

mustard

salt

ground pepper

I usually start by boiling the beef until gets tender with the carrots, celery and parsnips. I also season them with salt. When the vegetables are boiled I remove them from the pot and leave the beef to boil until is ready.

In another pot I add the potatoes with their skin on and the eggs and bring them to boil. After that I remove and leave them to cool down to be able to peel them.

 

When all the ingredients are boiled and cold I start to chop them finely and add them to a bowl. The next step is to mix them and season them with salt, ground pepper, mayonnaise and mustard by your taste.

This Romanian potato salad needs to be served cold and is an appetiser.

  1. I’m a Romanian born in the former Yugoslavia but I’ve lived in Canada for more than 50 yrs. Over the years, a lot of Romanian dishes disappeared off our table including this one. I’m not fond of pickled items but I’m sure the dish could be changed a bit for my tastes. 🙂
