I am a big fan of soups and I love to make them as much as I like to eat them :-).
Today I want to share with you my Moroccan Chicken and Lentils Soup. First I will start by letting you know why I like it. I like this soup as it is a healthy, delicious and with vibrant Moroccan flavours, variety of vegetables, dried fruit, lentils, rice and moist chicken, all of this being an interesting mix.
1 tablespoon of oil (I used vegetable oil)
1 onion, peeled and chopped
2 carrots, peeled and chopped
1 chopped celery
1 chicken breast cut into small pieces
1 litre organic chicken stock
500 ml of tomato sauce
1 tin chickpeas, drained and rinsed
1 hand of drained and rinsed green lentils
few dried apricots, chopped
fresh chopped parsley
1 lemon cut in wedges
Prepare all the ingredients by washing them, peeling and cutting them. Then I heat the oil in a pan and add the onion, carrots and celery, and cook them for about 5 minutes until softens. After that I add the pieces of the chicken breast and add salt, cumin, coriander, turmeric, cinnamon, and chilli powder. I cook this for another 5 minutes until the chicken gets golden and mixed with the condiments.
When this is done I transfer the mix into a saucepan where I add the tomato sauce, the chicken stock, lentils, rice and apricots. You may need to add more water.
The next step is to wait until you bring it to simmer, cover it and cook for another 30 minutes until all the vegetables are done.
I like to serve it with lemon juice, hot garlic bread and fresh chopped parsley.
