The roasted chicken breast is a quick and delicious way to cook your dinner and save for lunch the next day.
2 chicken breasts
2 medium sweet potatoes
1 lemon zest
1 good lug olive oil
1 pinch sea salt
1 pinch freshly ground black pepper
1 pinch of paprika
Provençal herbs (savory,marjoram, rosemary, thyme, oregano)
4 slices of smoked bacon
Firstly I put the chicken breasts in a bowl after I removed the skin. Next step is to prepare a marinade that is made of 1 lemon zest, olive oil, paprika, salt, pepper and prevençal herbs. After mixing the ingredients I add them on top of the chicken and try to cover all the faces. I put the chicken in the fridge for about 30 min -1 hour (depends on time you have). Meanwhile I peel and wash the vegetables and cut them and I make sure it has the same dimensions, as I don’t want to risk not cooking them properly.
I preheat the oven to 200°C and in this time I prepare the ovenproof dish with the carrots and sweet potatoes and drizzle them with some olive oil. I also wrap the chicken breasts with the smoked bacon on top of the vegetables for extra taste. I love to add the bacon because of the flavouring from the meat and it also protects it from having a dry texture.
Place the dish in the middle of the oven and cook it for about 30 minutes and this is my roast chicken breast with bacon, carrots and sweet potatoes dish.
